By dehydrating, the cherry loses water and gains intensity. A small handful tastes like a lot of cherries.
What lasts weeks in fresh here lasts months: the dehydrated cherry stretches the season of the Jerte all year round.
Use it where raisins would go but you want acidity: in a bird filling or in a couscus, its sour point cuts the fat that passes it just sweetens.
Ten minutes in a warm red jet and they swell juicy, with alcohol taking its taste inside. The water only softens them; the wine potentiates them.
Fin cuts on a curing or blue yield more than whole: each bite carries cherry, and the concentrated sweetness holds the delivery of the strong cheese.
