The pepper loses much of its weight in water during drying, which concentrates its intense red color.
The itching depends on the variety of pepper and how much placenta and inner veins it conserves, so there are sweet and spicy versions.
A very fine milling makes the aroma free before opening the container, so it should be closed well after each use.
Add it out of the direct fire, excessive heat can burn it and leave a bitter taste on the plate.
Keep it in a closed boat with no direct light to keep its color and aroma longer.
