It is the Cake of the Casar PDO carried to cream: it carries a minimum of 50% of cake and keeps its taste, softer and ready to spread.
When it is covered with a flower of cardo and not with an animal, it retains that noble bitterness and is suitable for vegetarian diets.
Simple and homogeneous texture with lactic and vegetable notes. The bitter end gives away its origin: the cardo flower curd.
For meat or vegetable sauce, funnel it over soft heat by removing: if it breaks to boil, the fat is separated and cut. Liga solo, no cream, just before serving.
Its already creamy texture is a direct base of bechamel for croquettes: it provides the bitterness of the cake without having to melt hard cheese. It also goes on solomillo as an express sauce.
Unite it on freshly roasted bread to base the contact and finish with Cherry del Jerte jam: the sweet acid crashes with its bitter cardo. Better than cold bread, where it's compact.
