The Cherry del Jerte PDO brings together varieties such as Navalinda, Burlat, Van and Lapins, grown between mountains and clean water throats.
The Burlat opens the season at the end of May. The fresh cherry lasts weeks, not months: that's why each box counts.
It is collected by hand at the right point of maturation, in baskets of chestnut, hillside of the Valley of the Jerte.
In the premium the pedunculo goes on and green: it is your freshness meter. As soon as it leaves, the cherry has been out of the tree for days.
His skin is soft and marked by pressure. Keep it in a single layer, not in a pile: the weight of the top bruises the weight of the bottom and there begins to ferment.
30 seconds on the plate or hot roast: the short heat caramelizes the sugar and makes them garnish a magret or a foie, without losing the firm meat.
