  • Honey without flowers

    The oak honey is not born of flower nectar. Bees collect the sweet molasses that sucking insects leave on the oak: it is a yellowish, forest honey.

  • Dark because it's dehesa

    From that origin comes its almost black color and its unsweet taste, to malt, liquorice and smoked forest. The whole dehesa fits in a tablespoon.

  • Late in the day

    As it is melted and not nectated, it crystallizes very slowly. It holds liquid and denses much longer than a flower honey.

In the kitchen

  • Glasses a magret at the end, not before

    Paint the duck magret or a few ribs in the last 2 minutes: being just sweet and almost salty, lacquers without burning or splicing, where the sugar would give a sticky and bitter candy.

  • League a vinaigrette for foie or blue cheese
