To enjoy it even more
The bitterness mixes the varieties Jaranda and Jariza. It is the middle point: it smokes intense with a light touch of spicy.
Not as soft as the sweet, not as bravo as the spicy. For those who seek nuance without giving up character.
Like the whole PDO, it dries with oak smoke and oak, not in the sun. That gives him depth and holds in the pantry.
Its midpoint between sweet and spicy is made by the king of the adobo: mix it with garlic, oregano, vinegar and oil to marinate the loin or chicken. It gives the character of the chorizo without passing you hard.
Like all the Pimenton of La Vera, out of the fire. But here it takes special care of the balance: if you burn it, you lose that bitterness that just distinguishes it from the sweet and the spicy.
