The recess takes advantage of the excess serum when making cheese, heating it again until its proteins form soft grooves.
The recess has a soft and wet texture that is easily undone in the mouth, just removed from the mold.
Take the recess out of the refrigerator just before serving it, to take advantage of its soft texture and milk taste.
Combine the recess with honey, fruit or some oil, as its soft taste supports other ingredients.
