Within the lamb there are dairy, recental and paschal, and the color of the flesh is darkened as the animal grows and changes its food.
The lamb fat varies in tone depending on the age and feeding of the animal.
Choose the bone cuts to get more taste to the roast or to the iron.
Cook the lamb over soft heat so that the fat is fused little by little and the meat is tender.
