Curiosities and cooking
Did you know?
- Corderex, Extremadura PGI
Corderex is the protected geographical indication of the Cordero de Extremadura. It only protects lambs born and raised in their dehesas under the control of the Regulatory Council.
- Of a merine mother
It comes from merine mothers or their crosses. The lamb breast milk his first 45 days, raised in extensiva on the grass.
- Young and tender lamb
It is sacrificed on less than 100 days, giving light channels. Its meat is very tender and lean, with a soft fat infiltration.
In the kitchen
- Extreme Caldereta, its great dish
It is the lamb of the chard, the stew of the transhuman shepherds. Toss the leg with bone, fold it with garlic and laurel, pimenton and wine, and cook at slow heat an hour and a half until it takes off the bone.
- The liver mallet links the sauce
The secret is not flour: the liver of the lamb is fried and milled in mortar with garlic, pepper and a little of its broth to a fine pasta. That pasta, diluted in the end, is thick and honors the sauce.
