- Raza reink
The reink is an indigenous, red and rustic dehesa vaccine race, capable of walking miles for grass. This extensive life gives a tender and juicy meat with little saturated fat.
- Dehesa flavour
It is raised freely on natural grass, sharing with the Iberian pig and the merine sheep. Hence its deep sapidity, awarded in blind cues.
- The back, noble piece
The back is the muscle that runs along the back of the animal: lean, clean and fine fiber. It's one of the most appreciated cuts to make the point.
In the kitchen
- Thick and one-way
Cut tacos of 3-4 cm: it is lean of dehesa and if the fine lamines dry instantly. Red iron, hand it over one face without touching it and turn it over once. Every tap or turn steals juice.
