The loin is a lean piece that heals whole and is gradually losing weight as it dries.
During the curing, the back is taking a darker tone on the outside, while the interior is pink.
Cut the back into thin slices and serve it as, like one more funnel, to better appreciate its taste.
Save the piece well wrapped in the fridge and cut it shortly before serving so that it does not reset.
